Superfoods Month: Back to Basics Trail Mix

Happy April everyone!

This month we're going to be talking all about superfoods. We'll also be sharing some of our favorite superfoods recipes, along with promotions and giveaways. From chia to coconut to cacao, blueberries, goji berries, and more... superfoods are a great way to boost your health and well being. They're also pretty darned delicious, if I do say so myself.

Let's start with the basics, shall we? This trail mix is great for those of us who are always on the run, but don't want to sacrifice our health either. Keep a jar of this mix at the office, in the car... wherever makes the most sense.

Back-to-Basics Trail Mix

Trail mix is a simple, satiating, protein- and fiber-rich between-meal snack. The best way to incorporate chia seeds into a trail mix is to toss them with sticky fruits, as they will cling to the fruits rather than settling to the bottom of the bag. Make a batch (or two or three) of this trail mix and store in a jar in your pantry (or refrigerator or freezer) for any time you crave a sweet and crunchy snack with a boost of fiber.

1⁄2 cup (75 g) raisins
1⁄2 cup (75 g) golden raisins
1⁄2 cup (65 g) dried apricots, finely chopped
1 tablespoon (12.5 g) chia seeds
1 cup (140 g) raw cashews
1⁄2 cup (32 g) raw pumpkin seeds
1⁄4 cup (36 g) raw sunflower seeds
1⁄4 cup (32 g) raw cacao nibs

In a large bowl, combine the dried fruits and chia seeds. Use your fingers to combine and gently press the chia seeds onto the dried fruit pieces. Mix in the remaining ingredients and store in an airtight container. This keeps best refrigerated or frozen.

Yield: About 3 1⁄2 cups (525 g)
