Mesquite Sweet Potato Hash

Mesquite Sweet Potato Hash

2 large sweet potatoes, peeled and shredded (about 2 pounds, or 910 g)
1/2 medium-sized onion, chopped finely
2 tablespoons (8 g) chopped fresh parsley
1 tablespoon (14 g) mesquite powder
1 1/2 teaspoons sea salt
1/4 teaspoon freshly ground pepper
Pinch of ground nutmeg
2 tablespoons (28 ml) grapeseed oil

In a large mixing bowl, combine all the ingredients except the grapeseed oil and mix well. Heat the grapeseed oil in a large skillet over medium heat. Add the sweet potato mixture to the skillet and saute for 15 to 20 minutes until browned. Remove from the heat and serve warm.
